🍝 MEALS FOR ONE

This is the pasta you make when you want something that feels special but you have approximately zero energy to cook. Boursin cheese is the whole secret. Melt it with a splash of pasta water and some lemon zest, toss in hot pappardelle and parmesan, and in ten minutes you've got a glossy, garlicky, herby sauce that tastes like you worked a lot harder than you did. Top it with chives and call it a night. I could eat this once a week and not get tired of it.

Nothing says Halloween like a caramel apple, and these little guys are the easiest version I know. Small apples get dipped in rich caramel with cream and a pinch of sea salt, then rolled in sprinkles or chopped nuts if you're feeling fancy. Bite-sized, nostalgic, and perfect for a Halloween party table (or just you, standing at the counter, pretending you're going to share).
